So my love affair with pizza continues and I do believe it will never end now that I have found Cup 4 Cup Pizza Crust Mix! It continues to deliver every time! This time around I even used leftover dough to make cheesy bread sticks as you can see on Zia’s Kitchen Facebook page. The entire family, Mama Sis, Nonna, Ladybug AND our resident picky eater Littledude loved them so much I have a feeling they will be requested in the future.
I do wish that gluten-free items and mixes were not so pricey, the Cup 4 Cup Pizza Crust Mix is a bit expensive so we can’t really afford to have it that often, however I must say it really is worth the splurge when we do!
This month the great people at Organic Girl Greens sent me something I have never seen at my local Publix, a Fresh Herbs and Greens mix. After munching on a bit of it raw I have to tell you this is one of the tastiest salad mixes I have ever had!
It is so tasty I had to put a post-it note on the box to remind sis I needed to create a recipe with it and to stop snacking! The flavor profile is distinct; it mixes tender baby greens with fresh herbs such as Italian parsley and Cilantro. Cilantrophobes beware. But what to create with it?
I realize that so many of my recent Organic Girl Recipes have been about hiding the greens so that Littledude (and now Ladybug has started picking greens out of things) would get the green nutrition without really knowing. This mix is far to bright and tasty to cook up and hide, yet I wanted to come up with something a wee bit more original than a typical salad. Then inspiration – in the form of a memory – hit.
Years go when I lived in Venice California there was a popular pizza place called Abbot Kinney Pizza. They had a great variety of crusts, you could buy by the slice and they had this incredibly unique salad pizza, so I can’t take credit for inventing this out of thin air. Theirs was very different though, a creamy cheese based sauce, mostly just mixed romaine, and loaded with a lot of olives, onions, cheese and more. The Organic Girl Fresh Herbs and Greens has such a strong flavor profile I really didn’t want to mask it so I set out to celebrate it.
Organic Girl Herbs and Greens Salad Pizza made with Cup 4 Cup Pizza Crust Mix
This is incredibly simple to make!
First make the pizza dough with the super easy to use Cup 4 Cup Pizza Crust Mix.
I baked it longer then the “pre-bake” instructions because this would be the only time it went in the oven. You want the crust finished.
Next I put a few spoonfuls of Sour Cream, half of an Avocado, a healthy squeeze of the Cilantro, some sea salt and the juice of a lime into the Nutri-Bullet.
Then I diced tomatoes, sliced avocado, sliced (very thin) red onion and crumbled up the goat cheese.
When the pizza crust is ready, smear it with the Avocado – Lime “Sauce”.
Next add the Organic Girl Fresh Herbs and Greens.
Finally Top with Onions, Tomatoes, Goat Cheese and Avocado.
Voila! Healthy Pizza.
This was an adult dish as I knew the monkeys wouldn’t even look at it, let alone try it (I can not WAIT until they grow out of this phase). I ate half of it and not to toot my own horn but – it was FANTASTIC! I left half for Mama Sis and she ate it late night when she got home. The next day she told me it was awesome, so this gets a fist bump from the adults.by
