I am going to start this one off by being completely honest. This is NOT low-calorie, NOT low sugar and NOT low fat. It is however Gluten Free, incredibly simple and ridiculously delicious! When you see the ingredients you will know why.
Making tasty gluten free baked goods is a definite challenge, a lot of misses to get a hit here and there. This Summer Fruit Cobbler (I call it that because it is so versatile – you can enjoy it with many different kinds of fruits) is one of my favorite discoveries. I found a this recipe online about a year ago, however it was NOT gluten free. I of course altered to GF but the first time I made this it was WAY to sweet, so after a little experimentation I found the sweet spot….so to speak, and today I will share it with one of my favorite fruits – blueberries.
This recipe always reminds me of a scene in the movie Steel Magnolias, which I can recite pretty much by heart. Perhaps because I performed in a production of it many years ago, or perhaps I have seen the movie far to many times. If you are a fan, you will know what I am talking about…
Clairee – What’s that recipe you were telling me about? Cuppa Cuppa Cuppa?”
Truvy – Oh thats so easy you don’t even need to write it down. It’s a cuppa flour, a cuppa sugar, a cuppa fruit cocktail with the juice, just mix and bake ’til gold and bubbly.”
Clairee – “Sounds awfully rich.”
Truvy – “It is, so I serve it with ice cream to cut the sweetness.”
Cracks me up. this is not the same recipe, but is so easy that you will get to the point where you never need to look at the recipe again.
1 Stick Unsalted Butter
1 Cup Milk (or buttermilk)
1 Cup Gluten Free Bisquick
2/3 Cup Sugar (original recipe called for 1 cup but I found it over sweet)
1 Cup Blueberries (strawberries, peaches, and cherries work great as well)
Cinnamon and Sugar for topping – optional
See what I mean? NOT low anything!

You will need an 8 X 8 Baking Dish
Preheat the oven to 350°
Place the stick of butter in the dish and put in the oven until it is melted.
It will then look like this.
Add the sugar and the Bisquick to a bowl.
Add the milk and mix together until smooth.
Pour the batter over the melted butter.
DO. NOT. MIX.
Spoon fruit of choice all over, covering the baking dish.
DO. NOT. MIX.
Pop it in the oven to bake 40 – 35 minutes….or “Until Gold and Bubbly”
I like to use my cinnamon and sugar grinder to give the top a light dusting immediately after if comes out of the oven.
Let it cool a bit before serving so it can set….and then….
I can’t even describe how yummy this is served a bit warm. Ice cream is optional.
The Monkey’s AND Nonna practically licked their plates clean. Gluten free Bisquick acts just like regular bisquick in my opinion, I have noticed it can be a bit sweeter, which is why I cut the sugar down from the original 1 Cup. You can make any alterations you desire, but then I can’t vouch for the yumminess.
This is a hit time and time again so Zia’s Summer Fruit Cobbler gets a double FIST BUMP!
