So this month when Organic Girl sent me their wonderful Hearts of Romaine to play with, I honestly didn’t even take the kids into consideration. I knew I didn’t want to hide the sweet crunchy tender hearts, I wanted them to be front and center….but they are of course, GREEN in color….so the monkey’s were out of the tasting equation.
These lovely greens come in their brand new “Protect Pack” with a easy to “re-seal” top and a wide bottom. Perfect!! I decided I wanted to use them in other ways then just a salad (but I did make several yummy salads as well). So here are just a few of the ways I enjoyed them.
Like a beautiful blank canvas ready to create on, the leaves are bright, crunchy and sweet. For my first experiment I decided to add a little spice.
The best part about using the leaves as “taco shells” is that you can fill them with ANYTHING you like to put in your tacos! We had some Organic Grass Fed ground beef on hand, so I sautéed that up with just a little S&P, some finely chopped Organic Girl Supergreens, and a pinch of taco seasoning. (I didn’t want to make it to spicy as I did use the meat to make “mini tacos” in little tortilla cups for the kids).
I had some Coconut Rice from the other night, so I actually threw that in the pan after with a little coconut oil to crisp it up. I then filled the leaves with some of the rice, meat, a bit of shredded cheese, sliced avocado, cilantro and of course Sriracha for added kick. (I love and use Sriracha a LOT)
DELISH and pretty decently nutritious. You can skip the frying part of the rice and this becomes a very healthy taco.
Organic Girl Burger
Why did I name this an Organic Girl Burger? Well I am glad you asked. Nonna gave me some defrosted ground chicken to make into something and burgers were the obvious choice at the moment (quick and easy it was a crazy day) So I mixed the meat with some S&P, seasoning AND more finely chopped Organic Girl Supergreens! (One of my attempts to sneak greens into the kids mouths)
I served the kids and Mama Sis the burgers on buns by request, but I didn’t have any gluten-free hamburger buns on hand (need to try out Canyon Bakehouse ones this summer). Then I remembered…I have more OG Romaine Hearts! A little munster cheese, some sliced avocado and I wrapped my burger in a few Romain Heart leaves…and Presto! A yummy, carb-free cheese burger – filled with Organic Girl Goodness!
Finally – not to play favorites or anything – but this one was….
Smoked Salmon Salads
Ingredients: Wild Alaskan Smoked Salmon (no color added), Dill, Cucumber, Capers and Red Onion (all were organic), Organic Girl Romaine Hearts AND Supergreens (hmmm I am seeing a theme here) and instead of cream cheese I went with Oikos Greek Yogurt Dip.
I LOVE Smoked Salmon! I have posted on Zia’s Kitchen Facebook about my love of Smoked Salmon and Organic Girl Supergreens with cream cheese and a gluten-free bagel being favorite power breakfast of mine. With that in mind I thought, why not have a mini / individual salad you can enjoy for breakfast? Or brunch. Or Lunch, or even a snack!
Thinly shave the red onions and cucumbers, and then really layer and add the ingredients as you like. I smeared a little of the greek yogurt dip, added the Supergreens, smoked salmons, cucumber, red onion, capers and dill, then dotted a little bit more of the Greek yogurt. Lemon is optional – but adds a lovely fresh zing!
I think these would be lovely to serve at a brunch, they will pair quite nicely with a mimosa I think! (Heaven knows I could use one)
