Turkey White Bean Pumpkin Chili

I love my new slow cooker.  I may have mentioned that before.  The only problem I have is that I tend to make a LOT of whatever dish I am making, which wouldn’t BE a problem if I could guarantee the little ones would always like what I have made. That would be nice.  So nice.  Alas, that is not always the case so the adults usually end up enjoying and eating most of it. <hmmmm perhaps why I am gaining “winter weight” when I live in Florida>

Here in Florida we have had a few colder than usual snaps giving us a taste of “winter”. I am not by ANY means complaining about it, basically every other place in the country is having a rough winter…(Polar Vortex anyone?)…..here it has been lovely.  Even on those few days it was in the 40’s / 50’s.  I LOVE that weather, cold and sunny.  The only issue we have had is that the Littledude and the Ladybug have ZERO attire for actual cold days, but if that is the worst of our problems, a problem that can be remedied by a quick trip to the clearance rack for kids in Target, I will take it….

Lobstah ‘n’ Buttah

I love Lobster. Well truth be told I have an affinity for all crustaceans of the sea, but Lobster is the top of the list. From my first taste I was hooked. Growing up summers in Ocean City, NJ at my paternal grandparents summer home (yes I was a fortunate one) sometime in August every summer a client (or friend…memory is fuzzy) of my grandfather’s would have a crate of live lobsters shipped to the house complete with seaweed and ice, and the annual seafood boil meal would commence. (There were usually steamers as well as crabs boiled in beer….my mouth waters at the memory)….

Cinnamon Port Cranberry Sauce

THANKSGIVING!

I have to make this brief as I am working on my Thanksgiving dinner (this is MY holiday in the family) and I will share details of the meal in my post feast/food coma state.  However I would be remiss if I didn’t post at least ONE of my favorite recipes pre-game day. I have been making this for years, it is a huge hit every year, even loved by those who say they don’t like cranberries!  It is currently simmering on my stove top right now and smells amazing. A spicy fall-type smell.  Yum! I make this 2 days ahead of time to make life a little easier on T-day.

Just so you know this ain’t your mama’s cranberry sauce.  Although, if it is…I want to eat at your house sometime!…

It’s All About The Corn Flakes

When you are Gluten Free you don’t get to enjoy very many fried or “crispy” foods you once did.  Which is probably a good thing.  However for those times you want to make things like breaded eggplant, chicken fingers, zucchini fries or more, most gluten free breadcrumbs just don’t cut it.  Panko is out of course.  So what do you do?  I recently found the answer in Publix completely by accident.  While searching to see if they had any new gluten free breadcrumb options I found it.

Pumpkin Cinnamon Rolls

Well in the past few weeks while I have been absent from the blog, I have still been cooking up a storm, and eating like I am getting ready to hibernate for the winter. Of course I live somewhere where you can still wear bathing suits through winter, so I better cut it out.  However I have been inspired of late to bake more and after discovering I had more cans of Libby’s 100% Pumpkin in my pantry than I really knew what to do with, I decided it was time to start using them up and in more creative ways then pumpkin pie!

My friend Mel gave me a pumpkin chili recipe that sounds to die for, but I have yet to go get myself a slow cooker/crock pot so I am waiting on that one. I was looking up some ideas online and found Pumpkin Cinnamon Rolls! Ok, sounds perfect!  Now to make them Gluten Free!

Oh a baking we will go…a baking we will go….high ho my jeans are tight, a baking we will go………

Williams-Sonoma Gluten Free Pumpkin Bread

I love fall. Up North where I was born, the air gets cool and crisp, the leaves change color the smell of burning firewood starts to permeate the air.  In Southern California where I lived for so long, the days are sunny, the temperatures range from the mid 60’s to the low 80’s.  You can start wearing layers, the sunsets seem to have an even more golden hue, the pacific drops in temperature and Trader Joe’s shelves are lined with pumpkin flavored products of every kind.

Here in South Florida……well……the license plates start changing color as the snowbirds start migrating down here on 95.  I would like to say it starts getting cooler, the humidity drops and it becomes more pleasurable outside, but that, technically, would be a lie.  (That’s what it’s like in the winter.)…

Kale. It’s What’s For Breakfast.

Or brunch……or breakfast for dinner, you get the idea.  Generally when you think of Kale, you may not think of it as a breakfast element unless you are juicing it or using it in a smoothie.  That’s how I used to think of Kale in the morning, then I put it in scrambled eggs and realized it’s far more versatile and goes REALLY well with eggs.

Organic Girl 100% Baby Kale is very sweet and tender as I have mentioned before, munching on it straight out of the package is delicious, so I decided to experiment with it for breakfast dishes beyond scrambled eggs and the results were very yummy.  I actually served both as “breakfast for dinner” a big favorite of mine but I think both or versatile enough to be served at any time of day you like, it all depends on how much you like breakfast.

I like it a LOT….

Organic Girl Baby Kale Giveaway and Recipes – Snacks

I have to admit, 10 years or so ago I had probably never even tasted Kale.  Now, it’s one of the most talked about leafy greens out there.  I find myself eating some practically every day lately.

The fact that the lovely people over at Organic Girl sent me a bunch of their newest product, 100% Baby Kale to experiment with, probably has something to do with it!  While trying to come up with new inventive recipes, incorporating Baby Kale in things I hadn’t before, I also found that I used it in a bunch of ways the past few weeks.  I put it in my homemade Mac & Cheese, scrambled eggs, juiced it you name it. While I was working with it I would just snack on it raw, it really is sweet and tasty all on it’s own!…

It’s Time To Stuff It

Stuffing, it’s not just for Thanksgiving!

A few weeks ago I was in some sort of “stuffed foods” mood.  Not entirely sure why, but I went with it.  First up was the stuffed burgers.  I won’t spend much time on that, as everyone makes stuffed burgers. A friend bought us almost 6 pounds of ground beef from Costco.  Not sure why he got us so much, but a had a bit of burger making to do so we could freeze them, and I looked at some of the things we had in the house and thought “Stuffed Burgers”

Next up were the gi-normous, ridiculously big and beautiful mushrooms he brought us.  PERFECT for Stuffed Mushrooms! Except, well as silly as it sounds and simple as they are to make, I had never made stuffed mushrooms before.  So I thought, oh what the hell, I will make it up!…

Zucchini Chips

Zucchini.

As a kid I HATED it.  I don’t know if I ever even tried it, but you couldn’t get me to go near that or any other kind of squash, which was weird because I was generally not a picky eater.  Now one of my favorite foods.

Some days Littledude LOVES it.  Others, well lets say that one of these days I need to take a photo of what the floor looks like post-dinner when he is in a “no food mood”.

This is a quick and easy little recipe that my family really loves when I make, and when I say simple, I mean simple. I have a very specific way I do it, but you can get creative with spices and flavorings….
