It’s Cocktail Hour Somewhere

VitaF

I have a lot of recipes coming up to share but it’s time for another Zia’s Kitchen review.

Guess what?  It’s NOT a cookie review.  I have been saying I needed to stop just reviewing cookies and review something healthy.

Organic alcohol made with a berry known for it’s incredible healthy properties counts right?

(I may have mentioned in the past I have the ability to justify most anything)

But seriously folks, this IS actually a cocktail that is probably healthier then your average libation. (In moderation of course)…

Why is it called Chicken Pot Pie?

CPP_17

Just one of those culinary questions I have.  I mean why is it called POT pie?  It’s a “pie”.  Is it because it is made IN a pot? In that case shouldn’t most things have the term “pot” in the description? It confounds me.  These are the things that keep me up at night.

I know I know….I need a life.

But if I had a social life and other things to occupy my brain other than food and cooking, my family wouldn’t be eating half as well.  That and Mama Sis wouldn’t be complaining she has put on weight – like 2 or 3 pounds – get over it! (she has always been the “skinny” sister.)

So I did what any mildly culinary obsessed person would do.  Googled it….

Immaculate Gluten Free Cookie Dough

IMG_7172

Another Gluten Free Cookie Review.

At this point I should be getting embarrassed.  I should also be 10 pounds heavier.  Here I am reviewing yet ANOTHER gluten free cookie.  The things I do in the name of research for my readers, it’s a tough job.

I have see this brand of cookie dough at Publix, Fresh Market AND Whole Foods so I figured it was time. Even meant to be. The universe wanted me to bake and review these cookies.  (I have the ability to justify almost anything)

Immaculate Cookie Dough has, from what I can determine, two flavors that they make gluten and dairy free, Fudge Brownie and Chocolate Chunk.   Gluten AND Dairy free, …

Overnight Tomatoes

Organic Tomatoes

Organic Tomatoes

I have been making Overnight Tomatoes for years now.  So long I don’t need to look at a recipe. Of course the recipe is so simple I memorized it after the first time, and you will as well.

It’s important to note that I did NOT make this recipe up.  I have made little changes at times, but the original recipe (named Moonblush tomatoes) is from the cookbook “Nigella Express” by Nigella Lawson. I dig Nigella.  Maybe it’s that even though she is beautiful, she seems so normal.  Maybe it’s the accent….whatever it is I asked for and I received that cookbook many years ago as a christmas gift and I am SO happy I got it back after the “great cookbook disappearance fiasco of 2012-2013″ .  There are a handful of recipes in the book I make time and again, along with many I have not tried.

Yet….

Wedding Soup

WedSoup_7

He ate it!  He ate it!  He who eschews all food except bread and pizza ate it!

I’m a little excited over here in case you can’t tell.  Sunday was a stormy and rainy day here in South Florida.  Grey weather outside.  Air conditioning making the house cool enough to trick your body into thinking it is cool outside…and I had a hankering for soup.  My families favorite - Italian Wedding Soup, and in case you missed it….Littledude ate it!

Interestingly enough, this “famous” Italian soup favored in many italian restaurants is virtually unknown in Italy itself.  The term “wedding soup” is a mistranslation of the Italian language phrase “minestra maritata (“married soup”),” which is a reference to the fact that green vegetables and meats go well together. …

Pizza Stoned

“Those pizzas I ate were for medicinal purposes.”
― Amy Neftzger

Well in my case I’m eating pizza all the time for research purposes.

Yeah, that’s the reason.

I am still on my quest to be able to make really amazing Gluten Free Pizza and I keep trucking along.  Toppings are not the problem.  I have my sauce dialed in. I do everything from simple Margherita to a plethora of fresh amazing toppings.  …

Cooking The Books

IMG_4700

“…no one is born a great cook, one learns by doing.”
~ Julia Child

True words Mrs. Child. Wether you have been educated in the finest culinary schools in the world, or just cook daily at home, you must practice in order to be good, and that means you must COOK.  Some people say they “can’t cook” and you may be thinking “that’s me”  or “yeah Aunt Mary can’t boil water…”.  This could be true.   I could cook everyday and go to culinary school and never be an incredible chef like some I know.  I do believe that people are born with a predisposition towards culinary greatness.  It’s the same for anything.  A famous athlete.  A rocket scientist.  A surgeon.   Most people who are truly great at what they do, were blessed with a talent for it….

Fish Taco Tuesday

IMG_4581

Or it could be called Taco Tuesday Madness.  Madness because of the undertaking of this meal when you are making (almost) everything from scratch and dealing with 2 kids under the age of 2. A mad undertaking it was, but it was for Mama Sis’s birthday and truth be told I LOVE LOVE LOVE a good fish taco and I have learned to make them pretty decently.

Ok there was a lot to this meal, a few things were store-bought like the corn tortillas for example – I’m not COMPLETELY mental in trying to make those.  I also bought a Pico de Gallo and black bean dip this time because I really didn’t have the time and there is already a crazy amount of chopping involved in this meal. The rest however was made by little old me….

Let Them Eat Cake

IMG_4562

This past Saturday night was Mama Sis’s birthday.

I asked her what she would like for her birthday dinner.  Going out is not an easy feat with the monkey’s so a dinner at home was a given.  Nonna was going to be out of town so I had the run of her apartment and kitchen…thank god….because sis requested my Mexican Fiesta Fish Taco Dinner. I LOVE this meal.  Guests always love this meal. I am good at this meal.  But….. it takes a LOT of time to prepare.  I am working on the blog post to share some of the recipes for my Baja Fish Tacos, homemade Baja Sauce, Tomatillo Salsa Verde, Jicama salad, Guacamole….you can see there a lot of elements going on!

Today however, I am going to talk about the cake.  Mama sis loves Chocolate.  I mean who doesn’t like chocolate right?  I love it as well.  The difference between us though is in the fact that I can have chocolate sitting around, in the freezer or apothecary jars  (it looks pretty)…

Breakfast for Dinner

IMG_5035

I don’t know about you, but I LOVE breakfast. I mean I love food in general…obviously, but breakfast is my favorite meal.  Strangely enough breakfast holds many many memories for me, more so then any other meal…particularly downthashore”. That’s how you say “Going to the beach” if you are from Philadelphia or New Jersey.

Growing up, we had a beach house in Ocean City and most mornings Dad was in charge of breakfast.  This was decades before I realized I should be eating Gluten Free so we had pancakes, pork roll sandwiches (another Jersey/Philly thing), sticky buns from Mallon’s…you name it.  I even have distinct memories of being at my Dad’s parents beach house – Mommom and JJ and watching my grandmother make cream chipped beef. That was my Irish side of the family….
