Gluten Free Baking. It’s one of the more difficult areas of gluten free living for sure, and most of the recipes you have seen me tackle have come from my trying pre-made mixes.  While there is nothing wrong with that, we all want to know which mixes are worth the money or not when it comes to gluten free….if I am going to profess to be a “real” gluten free cook on this blog, I am going to have to start trying baking recipes from scratch and using GF alternatives to flour right?…

I am going to start this one off by being completely honest.  This is NOT low-calorie, NOT low sugar and NOT low fat.  It is however Gluten Free, incredibly simple and ridiculously delicious! When you see the ingredients you will know why.

Making tasty gluten free baked goods is a definite challenge, a lot of misses to get a hit here and there.  This Summer Fruit Cobbler (I call it that because it is so versatile – you can enjoy it with many different kinds of fruits) is one of my favorite discoveries.  I found a this recipe online about a year ago, however it was NOT gluten free.  I of course altered to GF but the first time I made this it was WAY to sweet, so after a little experimentation I found the sweet spot….so to speak, and today I will share it with one of my favorite fruits  – blueberries….

Sometimes I really enjoy creating new recipes, altering old favorites to become Gluten-Free and cooking up a storm.

Sometimes I just want something already mixed, gluten-free and easy to make. I have been promising a few friends who have had a recent family member diagnosis of a gluten allergy that I would do a list of best gluten-free prepackaged products, but it occurred to me that is a daunting task for one post.  Instead I am gong to do smaller posts for you all with my experiences with great gluten-free products.  Eventually I will curate it all onto a page but one step at a time.  The monkeys only nap for so long these days.

So my love affair with pizza continues and I do believe it will never end now that I have found Cup 4 Cup Pizza Crust Mix! It continues to deliver every time! This time around I even used leftover dough to make cheesy bread sticks as you can see on Zia’s Kitchen Facebook page.  The entire family, Mama Sis, Nonna, Ladybug AND our resident picky eater Littledude loved them so much I have a feeling they will be requested in the future.

I do wish that gluten-free items and mixes were not so pricey, the Cup 4 Cup Pizza Crust Mix is a bit expensive so we can’t really afford to have it that often,  however I must say it really is worth the splurge when we do!

This month the great people at Organic Girl Greens sent me something I have never seen at my local Publix, a Fresh Herbs and Greens mix. After munching on a bit of it raw I have to tell you this is one of the tastiest salad mixes I have ever had!…

Gluten Free SuperGreen Calzones

I don’t even know where to begin I am so excited.  I have posted many times about my search for gluten-free pizza crust that was more then just “it’s not bad, it’s ok”.  I was just hoping for taste, I didn’t even dare to dream about ease of preparation! I mean gluten-free dough is always difficult to work with right?

Oh no….no no no no no.  I appears I have found it.  The Pizza Crust Holy Grail!

I have to say I am thrilled that I have hooked up with the great people at Organic Girl.  Getting boxes of healthy greens sent to me monthly to cook with is great!  Having their support and trust to create recipes on Zia’s Kitchen for them is so exciting!  It’s funny, I was a huge fan and buying their greens long before they reached out to me through my blog.  In fact I was a fan even before I met them on the set of All Mixed Up well over a year ago. ~Interesting note, when they reached out to me via my blog they had no idea I was the same person who worked on the set of All Mixed Up doing the PR and taking all of the publicity shots for them ~ What do you call that? Kismet? Serendipity? Fate?

Whatever you call it my family and I have been eating healthy delicious baby greens of all different varieties and enjoying every minute!…

Sweet Treats

Valentine’s Day. Oh how it irks me. Yes, I am single, and generally always have been on this particular commercial holiday, but this year, while still single, I have my own funny little valentine.  He’s a bit short, won’t be taking me to dinner or buying me flowers and has a pretty early bedtime, but it’s all good because when he smiles or giggles my stone cold heart just melts and I become an advocate for love!

So what better way to show him my love but to make Rice Krispy Treats and let him help? Chocolate Rice Krispy treats no less.  Actually Chocolate Coconut Rice Krispy Treats! Hey….go big or go home.  They are a fun treat, that is Gluten Free and one of those “recipes” thats pretty difficult to mess up. Plus it makes the little monkey’s happy AND satisfies Zia’s chocolate craving to boot so it’s an all around win-win….

It’s All About The Corn Flakes

When you are Gluten Free you don’t get to enjoy very many fried or “crispy” foods you once did.  Which is probably a good thing.  However for those times you want to make things like breaded eggplant, chicken fingers, zucchini fries or more, most gluten free breadcrumbs just don’t cut it.  Panko is out of course.  So what do you do?  I recently found the answer in Publix completely by accident.  While searching to see if they had any new gluten free breadcrumb options I found it.

Pumpkin Cinnamon Rolls

Well in the past few weeks while I have been absent from the blog, I have still been cooking up a storm, and eating like I am getting ready to hibernate for the winter. Of course I live somewhere where you can still wear bathing suits through winter, so I better cut it out.  However I have been inspired of late to bake more and after discovering I had more cans of Libby’s 100% Pumpkin in my pantry than I really knew what to do with, I decided it was time to start using them up and in more creative ways then pumpkin pie!

My friend Mel gave me a pumpkin chili recipe that sounds to die for, but I have yet to go get myself a slow cooker/crock pot so I am waiting on that one. I was looking up some ideas online and found Pumpkin Cinnamon Rolls! Ok, sounds perfect!  Now to make them Gluten Free!

Williams-Sonoma Gluten Free Pumpkin Bread

I love fall. Up North where I was born, the air gets cool and crisp, the leaves change color the smell of burning firewood starts to permeate the air.  In Southern California where I lived for so long, the days are sunny, the temperatures range from the mid 60’s to the low 80’s.  You can start wearing layers, the sunsets seem to have an even more golden hue, the pacific drops in temperature and Trader Joe’s shelves are lined with pumpkin flavored products of every kind.

Here in South Florida……well……the license plates start changing color as the snowbirds start migrating down here on 95.  I would like to say it starts getting cooler, the humidity drops and it becomes more pleasurable outside, but that, technically, would be a lie.  (That’s what it’s like in the winter.)…
