I don’t even know where to begin I am so excited.  I have posted many times about my search for gluten-free pizza crust that was more then just “it’s not bad, it’s ok”.  I was just hoping for taste, I didn’t even dare to dream about ease of preparation! I mean gluten-free dough is always difficult to work with right?

Oh no….no no no no no.  I appears I have found it.  The Pizza Crust Holy Grail!

SuperGreen Hotpockets

I have to say I am thrilled that I have hooked up with the great people at Organic Girl.  Getting boxes of healthy greens sent to me monthly to cook with is great!  Having their support and trust to create recipes on Zia’s Kitchen for them is so exciting!  It’s funny, I was a huge fan and buying their greens long before they reached out to me through my blog.  In fact I was a fan even before I met them on the set of All Mixed Up well over a year ago. ~Interesting note, when they reached out to me via my blog they had no idea I was the same person who worked on the set of All Mixed Up doing the PR and taking all of the publicity shots for them ~ What do you call that? Kismet? Serendipity? Fate?

Whatever you call it my family and I have been eating healthy delicious baby greens of all different varieties and enjoying every minute!…

Kale. It’s What’s For Breakfast.

Or brunch……or breakfast for dinner, you get the idea.  Generally when you think of Kale, you may not think of it as a breakfast element unless you are juicing it or using it in a smoothie.  That’s how I used to think of Kale in the morning, then I put it in scrambled eggs and realized it’s far more versatile and goes REALLY well with eggs.

Organic Girl 100% Baby Kale is very sweet and tender as I have mentioned before, munching on it straight out of the package is delicious, so I decided to experiment with it for breakfast dishes beyond scrambled eggs and the results were very yummy.  I actually served both as “breakfast for dinner” a big favorite of mine but I think both or versatile enough to be served at any time of day you like, it all depends on how much you like breakfast.

I like it a LOT….

Organic Girl Baby Kale Giveaway and Recipes – Snacks

I have to admit, 10 years or so ago I had probably never even tasted Kale.  Now, it’s one of the most talked about leafy greens out there.  I find myself eating some practically every day lately.

The fact that the lovely people over at Organic Girl sent me a bunch of their newest product, 100% Baby Kale to experiment with, probably has something to do with it!  While trying to come up with new inventive recipes, incorporating Baby Kale in things I hadn’t before, I also found that I used it in a bunch of ways the past few weeks.  I put it in my homemade Mac & Cheese, scrambled eggs, juiced it you name it. While I was working with it I would just snack on it raw, it really is sweet and tasty all on it’s own!…

Sage advice from Mrs. Child, and something I occasionally forget to do. Now, due to Littledude’s vehement refusal of greens I have resorted to trickery and deceit these days.  Although a lot of dairy is not good for anyone, cheese is the proverbial “Golden Ticket” of ingredients to get him to eat anything green these days so cheesey goodness hiding the veggies is the way I have been going….

Mini Meatloaf Monday

I keep seeing the term “Meatless Monday” on cooking blogs, so of course I am going the other direction.  MEATLOAF MONDAY!

I have made this recipe a few times already. I’m going to let the cat out of the bag here….it’s a Hit!  It is the perfect sized delicious Turkey meatloaf, IMHO, and incorporates good greens for the little “no green things” dude in the house. The best part about them is that these little loaves freeze so well.  This is the kind of recipe that will take you under an hour to prepare a bunch of them that you can then pop in the freezer for a quick dinner in the future.  You only have to remember to defrost them a few hours before, and have some tomato sauce on hand to cook them up with.  Easy Peasy I promise….

Pan Pizza

In this house most Friday nights are “pizza night”, a night where I make another go at making gluten free pizza from scratch. Yeah I live a wild and crazy life…. I know….. I know

So here we are again on my quest for pizza that doesn’t taste so….gluten free.  There are a fair amount of pizza dough mixes on the market it appears <I just did a quick Google search> most of them pricey.  Soon however, I am going to have to resort to ordering a new brand off the internet as I think I have tried Bob’s Red Pizza Crust Mix every which way you can.  Many different types of pizzas and calzones have been attempted with varying degrees of …well success is not the correct word here, let’s go with results.…

Pretty Pizza

Only 2 posts and already a theme. Looking over my photos from the past 2 months to prepare for this I noticed my recipes / experiments lean quite heavy towards one food group.

Pizza.

Yes Pizza is a food group, well in my world it is. Going Gluten-Free is sometimes a pain in the ass sure, but I am fine living without most baked goods, breads, pastas etc.  Sure every now and then I get jealous of people biting into a light and fluffy piece of cake, or a real honest to goodness Italian Hoagie (Sub to most of the US unless you are from Philadelphia or New Jersey)
but I have a way to deal with it.  If it’s absolutely incredible and sure to be worth it, I cheat and take a bite or two.  I am a VERY lucky Gluten-Free person, …

Polenta Pizza Please

I’m going to start this off with a hit, because, well starting off with a fail wouldn’t entice you to come back I am sure. I am also starting out with a VERY simple, rather quick and easy one.

Mini Polenta Pizza’s 

Not everybody loves polenta the creamy corn-based dish from Italy.  My late grandmother (who taught me so much about Italian cooking and even authored a cookbook) called it “peasant food”, a status that polenta has had for centuries, generally made by the poorer class as the ingredients were much cheaper than the expensive wheat and flours it took to make pasta.  You can check out the History of Polenta and learn more about its origins. In this family we happen to love it….
